Step-by-step preparation:
Preparing the mushrooms: Clean the champignons thoroughly (it is better to wipe them with a damp towel so that they do not absorb water) and cut them into very thin slices. Lightly salt them in a bowl so that they begin to release their juice.
Preparing the onions: Cut the Crimean onions into thin, almost transparent rings. Red onions are less spicy and have a sweet taste, which is ideal for raw dishes.
Assembling the sandwiches: Cut the rye bread into slices (you can cut them in half into triangles). Spread the bread with a thin layer of lean mayonnaise. Place the onion rings on top, lightly salt them. Apply another drop of mayonnaise (this will help the mushrooms stick better and marinate). Place the champignon slices densely on top.
Decoration and marinating: Sprinkle the sandwiches generously with finely chopped green onions and parsley.
Important step: Let the sandwiches sit for 15–20 minutes. During this time, the salt and mayonnaise will lightly “cook” (marinate) the raw mushrooms, making them soft and fragrant.
